2 x Vegetarian Cottage Pie
2 x Rich tomato, bean, and lentil sauce topped with a buttery root vegetable and potato mash.
Description
For a quick and easy dinner satisfying 2 of your 5 a day, try this vegetarian alternative cottage pie. It is packed with root veggies, leeks, cannellini beans, sweetcorn and dark green lentils in a rich tomato sauce with a splash of Chardonnay white wine, and seasoned with sage, thyme & cracked black pepper. Topped with buttery mashed potatoes grown on the Yorkshire Wolds, combined with British carrots and swede.
Our Serving Suggestion
Serve with roasted wedges of skin-on sweet potato and blanched tender stem broccoli. To make this vegetarian cottage pie even more indulgent, try topping with grated mature cheddar cheese before baking in the oven until the topping is golden brown, and you have a gratinated cheesy crust.
Our Drinks Pairing
For red wines, choose a Sangiovese like Chianti or Pinot Noir. For white wines, a Chardonnay would be incredible.
